to answer the question, yes SEO helps build traffic.
on one of my sites we get more then 50% of our traffic from the search engines

My two-part advice, regarding SEO on forums:

1. Observe best practices. Google Webmaster Guidelines is a good place to start, followed by SEOmoz's Learn SEO tutorial.
2. Optimize your site, but don't obsess. Micro-managing everything will result in nothing but a headache.

You also need to some organic links to get organic results. Without links, you'll never have organic traffic from search.

Gaining traffic can be a false positive for forum owners because we don't want click-through traffic. we want people to join and become active members. So we really want to get our site out amongst groups of people with the same interest as us who have a higher likelihood of wanting to join in the discussions on our forums.

On the other hand there are sites around that just want to get people looking at the information there and maybe leave a quick comment or something for which SEO is a better tool.
